St. Patrick’s Day Good Luck Dinner

6 lb. bone-in loin pork roast
4 jars of sauerkraut
4 cans of black-eyed Peas
4-5 oz. of honey
1-2 oz. of molasses
1 case of beer (some is for the recipe and the rest is to drink!)

In a large roasting pan, put the pork roast in the middle and surround it with the sauerkraut, black-eyed peas, honey and 4 cans of beer (this is the lucky liquid). Add your molasses on top. If liquid does not cover the roast, simply add more beer! You should cover the pan and put it in the oven at 350 degrees for around 2 1/2 hours (or 20 minutes for every pound of roast).

Check it each hour, basting with more beer (if needed…if not needed baste yourself with the remaining beer). Add some fresh garlic and pepper when preparing for a little ZING! Include with the roast some green mashed potatoes by adding sautéed chopped spinach to your mashed potatoes as you use an electric mixer to blend until green!
